Title: Dove Recipe
Post by: Basshole on July 22, 2006, 07:06:52 PM
Here's another easy one that comes out pretty good.  You'll need a fish grilling basket like the kind you use to cook them when you are camping.  Just open up the basket and put down a layer of bacon, then take your boned out dove breasts and place them in the basket I usually pack them in there pretty good, about 12 - 15 birds worth (hey there small birds and I have a big appetite :eyebrownod:), sprinkle them with some Montreal Steak Seasoning or something similar.  Then layer it with some sliced up onions and mushrooms put a layer of bacon on top and close the basket up.  There isn't really any set cooking time, I cook it on my grill and just cook each side until the bacon looks good and done, the dove comes out so tender it's quite amazing, plus the bacon keeps it from drying out.  This also works well with thin sliced venison steaks.
