Title: Fresh oysters

Just before suppertime Sat. we had a sudden chance at some fresh oysters. An hour or two from being picked we pulled them out of a bucket of ice and put them on a grate over the family fire circle.

So far our favorite way is to cook them in the shell over flame or coals till they open, then we prefer to turn them and give them another minute on the heat.  Then shuck out the oyster, dredge it in melted garlic butter and eat.  I put some garlic powder and onion powder in the butter.  Six of us tried them, all men plus my most adventurous granddaughter.  My wife, DIL and wives of two grandsons plus a girlfriend all declined. 

Oysters are good but not great to my taste. We all decided we would wait awhile before our next batch.  I'd like to try frying them or making a chowder/stew.

Slurp em raw right out of the shell!...yummmmm.

Never tried a raw one, though have had plenty of chances.

Really enjoyed them on the half shell. Delicious! Then I saw a report, over thirty years ago, about a toxin found in one or two per hundred thousand oysters that could damage your nervous system and had proven fatal. The toxin is undetectable by testing and only discovered when eaten. Researchers indicated there was no determinable link as to which oysters would have the toxin. Apparently just shows up in some.  Interviews with some of those who were affected was an eye opener. Cooking destroys the toxin and fully cooked oysters are fine. Decided that kind of Russian Roulette wasn't for me.  It has a name.

Thanks for the info!  Missed your post till just now.  I want mine cooked, and all the more reason to avoid the raw ones.
