Beer batter

Randy Buker gave me this one, and mannnnnn is it good.

Get a box of pancake mix. I found the kind that requires eggs and milk works the best. Replace the milk with beer.

Mix it thin enough so it JUST sticks to the fish. If it's too thick the fish will be literally wrapped in a pancake, but the inside of the pancake wont be done. :confused:

Just moved some bass from the freezer to the fridge I'll be trying this one tomorrow, with the pancake mix involved I guess I could even fix this for breakfast.

I've been drinkin beer battered walleye from Lake Erie since i was a young pup. The only way i can eat fish anymore.

Made pancake mix and drank 3 beers now I am not hungry and need the three beers I put in the mix.Can I drink the mix with the beers in it ? or do I cook and eat the beer ? If you eat beer and not drink it do you still have to pee alot?

All jokes aside guys I will try this tonight me and my father went fishing this A.M.

I was told to pat the fish dry...then coat them with regular flour...let sit for about 5-10 min then dip them in the batter.  It supposedly makes the batter stick better.  I haven't tried it yet, has anyone heard of doing this?

It's true that the batter will stick better if you roll in dry flour first but in this recipe, you don't want it to get too thick.  I'd avoid the dry flour unless you really really like thick batter!

I use that method when I just make a plain beer batter out of flour and beer.
