anyone out there got a good spice rub they are willin to give up.
Heres a couple I got from a retired chef friend of mine.
1/2 cup kosher salt
1/4 cup chili powder
1/4 cup spanish paprika
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cumin
1 tablespoon cayenne pepper
2 tablespoons dried thyme
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons coriander powder
1/2 teaspoon white pepper
1 tablespoon fresh coarse ground black pepper
This makes alot but its a good general seasoning also.
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon sugar
2 teaspoons cayenne pepper
2 tablespoons chili powder
1 tablespoon cumin
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dried oregano -- crushed
4 tablespoons paprika
1 teaspoon dry mustard
1 tablespoon celery salt
1 tablespoon salt
Thoroughly combine all ingredients. Rub mixture into the meat, wrap
tightly with plastic wrap and refrigerate for 8 hours or overnight. Store
leftover mixture in an airtight jar or in freezer.
they can be spicy to some but hope you like em

This isn't a spice rub but it is good on catfish (and other species) fillets and nuggets.
Blackened Seasoning
2 T Paprika
2 1/2 T Salt
1 tsp Onion Powder
1 tsp Thyme
1 1/2 tsp Basil
1 1/2 tsp Cayenne Pepper
1 1/2 tsp Garlic Powder
2 tsp Lemon Pepper
Stir all ingredients together and put in a shaker. Dredge your fish fillets in butter and sprinkle with seasoning mix.
I cook them over charcoal in a hot iron skillet 2-3 minutes each side (depending on size of fillets)
