Title: Friday's dinner

Grilled wild turkey leg, sautéed okra (fresh from a friends garden) and mushrooms, cornbread dressing, and local grown sweet corn.

A wild turkey drum stick is a lot of work to eat, but worth the effort.

My wife cooked our wild turkey one year and it was like the one in Christmas Vacation.  You just kept trying to chew a bite off and could barely do it.  It has since turned into a family joke.

Jerry,

I soaked it for several hours in a salt/sugar water brine, and injected it with the brine solution prior to putting it on the grill. The brine really helps prevent the meat from drying out so much while grilling. It came out pretty tender, but wild turkey legs, just like domestic turkey legs are full of tendons and it takes a bit of work to get all the meat off. The thighs really the best part.

I know what you mean Pat!! Seems like you're hungrier afterwards from all the work!!  :laf:

I like to shred the legs & wings. Put them in a pan with cream of chicken soup & cook it on the stove. Cream of turkey sammiches for me!!

Jim,

The southern turkeys, unlike the ones in your area, only have two legs.  So there is no chance for thirds.
