BigBen's post regarding his deer roast sounded soooo good, I figgered I needed to give it a try sometime. Well, the other day, the wifey decided to reintroduce me to the mall after about 13 or 14 years (I can see I haven't missed much). While there, I went into some kind of a kitchen store figuring I could find a few of the ingredients needed for the roast. Among the myriad of spices, I found a "garlic and herb" rub that sounded really good so I bought it. Sunday eve, I gave 3 roasts and 3 pieces of backstraps a good rubdown. I wrapped them in aluminum foil and stuck them in the fridge til Tues. As soon as I got home from work, I did like Ben and covered each roast and the backstrap pieces with cheap bacon, stuck them in the oven at 350 and let 'em bake for two hours. WOW, they were good. Everyone loved them. I am thankful that we had left overs to make sandwiches for my lunch. Now I have to try the bbq rub that Ben used on the next ones.
