Thanks for all the comments on the pictures I have submitted recently and in the past.  Sorry I do not always respond but I am usually gone a lot this time of year.  Here is what happened to one of the caribou from my last hunt.  Jalapeno and cheese sausage and pepperoni sticks (Slim Jim's, only better)

Looks good John. Do you use commercial sausage making kits or your own recipes? Are the sausages smoked or cooked in the oven? Just curious cause I started making my own summer sausage last year and am trying some other sausage recipes this year.
