That deer was so fresh the body cavity was steaming. What were the last two cuts for? Right before he wrapped it up he made a small incision in the center of each rack of ribs....what was that for?

I think he's going to use it as a finger hold when he cuts the ribs off. But I'm only guessing.

It might take him 3 or 4 minutes on a chilled out carcass.

Can you skin a fresh killed deer that fast?

i have myself an idea on what to do with an old ballscrew shaft i salvaged.

I'm at about a minute and a half Semp. But I have TWO Mexicans do mine.

We have some down here on the border that are probably even faster than this guy. Have seen calves hanging like this deer from trees, only hindquarters removed and tenderloins.
