Quick greens

Making greens is such a PITA, that I came up with a shortcut.  Don't taste half bad, either.
You'll need:
2 lbs smoked ham
32 oz chicken broth
1/2 yellow bell pepper
1 lg red onion
8-10 cloves garlic
1/4 cp olive oil  (bacon grease if your cholesterol is OK)
27 oz can Mixed Greens
27 oz can Collard Greens
liquid smoke
1 tsp red pepper flakes

Steps:
Pour broth in large pot and set heat at low.  Add pepper flakes. 
Cut onion in half and thin slice.
Skin garlic, leave whole.
Thin slice bell pepper lengthwise.
Saute all in oil until onions are limp.
Slice ham into 1/2" cubes.
Remove veggies from fry pan and add to broth.
Brown ham in remaining oil.  Add more oil if necessary.
"Lightly" sprinkle liquid smoke over ham while browning.
Add browned ham to broth.  Cover and bring to boil.
Add canned greens (juice and all).  Mix well, cover and return to boil.
As soon as it starts to boil again, remove from heat.  Leave covered and allow to steep for 10 min.

Serve over seasoned white rice, with a side of cornbread to sop up the pot likker.  A jug of Cabernet is good to wash it down.
Leftovers can be frozen, but don't count on there being any.
