Title: 19th Annual WV Roadkill Cookoff is Underway

is this weekend in Pocahontas county.

the festival is complete with a Miss WV Roadkill.

even i have to just scratch my head and wonder why at times, lol :grin:

One of my favorites:

Creamed Possum Casserole

Creamed Possum Casserole what the hay
A Hillbilly favorite that's here to stay
Find em shaking from a tree on the side of the road
Where the highway departments tractors have mowed
When ya walk up on them make sure they're dead
Cause a possum playing possum can take off your head
There's several different ways you can cream em
Add a little gravy or slightly stream em
Cook uncovered for an hour or two
Great with some left over cotton tail stew

I think I have heard that the secret family ingredient isn't really possum and that it had a black and white coat prior to being "harvested" for the casserole.

hey now,dont be tellin my secrets.AND if ya cook it long enough the stench will eventually disapate  and it takes on that ashy gray look that cooked  possum has so ya can barely tell the difference. :biggrin:

How many varieties of Miss Roadkill are there?  I think I saw at least four titles on the ribbons.  Rain at outside events is a killer for vendors - especially if there is some place inside where they can eat.  "Well, Florence, would you like to walk around in the mud or go inside and eat some roadkill possum n grits?"
