Title: Grilled fish

Ric's foil wrap reminded me of this grilled fish method I use quite often.

Take two pieces of aluminum foil just slighter smaller then your grills grate, so it fits without hanging over the edges.

Rub one down with butter completely covering all but an inch or two from the edges.
Lay your boneless fish fillets out on the butter covered foil. You can snug em together if you have several, they will shrink a bit.
Sprinkle the fish with a little bit of salt and pepper.
Slice up an onion and break the rings up, lay the onion rings out randomly on top of the fish.
Take a table spoon and drop several tablespoons of butter randomly on top of the onion covered fish fillets. Or slice up a stick of butter and lay it out on top of them.
Crush one small garlic clove and sprinkle it out on top of the fillets.
Finally, sprinkle on a bit of fresh Italian Seasoning over everything.

Take your other piece of tin foil and lay it on top, lining up the edges of the bottom sheet you can fold the edges of both sheets in a little at a time, forming a sealed pouch.

Gas grills you'll want the burners set as low as they go. Charcoal grills, you'll want the coals glowing but not flaming and spread them out.

Lay your pouch on the grill, keep it closed for a minimum of 30 minutes.

I have a huge glass cutting board I use to transport the pouch to and fro the house, it gets a little flimsy and HOT.

I've had, Bass, Pike, Catfish, Bluegills, and cod done this way. Imcomparable to any...wow!

Word of caution; pull your drapes and take the phone off the hook, once you get back to the house with your pouch, the smell of this when you open it has an uncanny way of luring the neighbors over. :sneer:

The recipe sounds delicious.It sure is nice of Rick223 to provide you with the fish so you can learn how to cook. I'm sure you invited him over to help you eat his catch? :roflmao:

Oh jimmer, Ok Ill tellem he does catch lots of fish usally first one to bring one in the boat. :biggrin:

Looks to me like you had the fish cleaning pan near the moose pen ?
