Yeah...how would they get the names and stuff? Watch them as they bought their tickets? They wouldnt ask for the kids name during a ticket purchase would they?

At the beginning of the video, they tell the passengers to scan their ticket to talk to Santa. I believe that the flight started in Canada and ended in New Zealand. That helped them get the shopping done before the plane landed. It was an extremely nice thing for the airline to do.
