Gramie Latta's Sugar Cookies
2 c. brown sugar
2 eggs
1 c. shortening (good measure)
1 c. sour milk or buttermilk
(You can sour the milk with 1 tsp soda in the milk)
2 1/2 t. baking powder
5 1/2 c. flour (sift with baking powder) don't overdo flour
1 t. salt
1 t. nutmeg or vanilla
Chill dough, roll out and use cutters
Bake 4-6 minutes at 400 degrees
(Personally, I like them closer to 4 minutes)
Snickerdoodles
1 c. shortening
1 1/2 c sugar
2 eggs
mix the above together
2 3/4 c. flour
1 1/2-2 t. cream of tartar
1 t. soda
1/2 t. salt
sift and stir in
Chill dough. Roll into balls & dip in mixture of sugar and cinnamon
Bake 8-10 minutes at 400 degrees
Chocolate Cinnamon Bars
2 c. flour
1 t. baking powder
1 c. sugar
3 t. cinnamon
1 c. shortening
1 egg PLUS 1 egg yoke
1 T hot water
Blend and press into a 9 x 13 sprayed pan. Brush with slightly beaten egg white and sprinkle with 1/3 cup of sugar with 1 t. of cinnamon mixed in. Sprinkle chocolate chips on the top and bake for 15 - 20 minutes at 350 degrees. (Personally I like the shorter time since I like softer cookies.) Cut into bars after cooled.
Carmels
1/2 lb. (2 sticks) real butter (don't even try it with anything but the real thing.)
1 lb. brown sugar (roughly 2 cups)
1 c. light corn syrup
1 - 14 ounce can of sweetened condensed milk
1 tsp. vanilla
1 c. nuts (optional - personally, I like them better without the nuts)
Over low heat, melt the butter and dissolve the brown sugar. Add the corn syrup, milk, and vanilla. Cook slowly, stirring constantly until it reaches 230 (about 40 - 60 minutes) degrees (soft ball stage). Pour into a buttered 9 x 13 pan. Chill 3 - 4 hours and then cut and wrap in wax paper. (Cut a large piece to eat when you start so that you can get a few cut and wrapped before you need to stop to cut another to eat.) These may be frozen.
Enjoy,
Jerry
