I know everyone has there own special recipe and process.
Here is mine.
Makes 9 big square biscuits.
2 cups flour. I use Wheat Montana flour it's very high protein.
Most biscuit recipes call for very low protein flour like cake flour or at the most all-purpose mid-range flour.
One stick salted butter
4 tsp baking powder,
1/2 tsp baking soda,
1 tbs white granulated sugar,
1 large egg
1/2 cup heavy cream
1/2 cup whole milk
1 tbs lemon juice.
add the juice to the milk and cream to "sour"

Preheat oven 450* I use convect.
In a large glass, bole add dry ingredient.
Cut the chilled butter into large cubes and add
Use a pastry cutter to cut/blend in the butter, to a course texture and well blended.
add the egg and milk mix.
Combine with a wooden spoon, try not to overwork and don't add any more flour it should be a bit sticky.
Take a piece of parchment paper spray with Pam spray.
With the back of the wooden spoon, sprayed, and mash down to make a 3/4 thick square.
Use a long knife to cut it like a tic tac toe grid to make 9 peaces.
Slide the paper on to a backing sheet try to separate the peaces slightly.
Let them sit for three minutes then put into the hot oven.
Cook 10 to 12 minutes till as brown as you like them.
In my convection oven, it right at 10 minutes and there quite brown
and crispy on the top.
If you want soft tops butter them hot if you like crisp don't.
Add eggs, gravy, jelly, whatever.
Let them set out for an hour or more on a rack without the paper if you want yo use them for egg sandwiches.
It should only take 15 minutes to make and 10 to cook.
