Woodchuck in sauce

We don't have these around here but for you that do give er a try!

1 woodchuck                  black pepper
1/2 cup salt                   1/2 cup vinegar
4 mint leaves                  2 cups tomato sauce
1/4 cup oil                      pinch of basil
1 bud garlic, chopped

Remove scent glands from chuck. Soak 8 hours in cold water with salt. Cut in 8 pieces and boil 15 minutes. Rinse and repeat soaking process. Rinse again and boil with mint leaves for 45 minutes. Drain and brown with oil and garlic. Salt and pepper both sides.When browned add vinegar. Cover and let simmer 8 minutes. Remove from pan and put into pot. Add tomato sauce and a pinch of basil. Cook over moderate heat 1 1/2 hours. Enjoy!

When i was little,my dad would make groundhog stew.It was very good and i havent had any in years.ill try to get the recipe and post it.

Just use it in place of beef in a lot of recipes. Good meat if you take them in the fall while they are fat. Jimmie
