Still trying to make room in our freezers so I thawed some backstrap to make poppers.

Sliced the backstrap diagonally into strips about 1/4" thick and marinated them in Japanese BBQ sauce. The Japanese BBQ sauce tastes about like soy sauce.

Split the Jalapenos and stuffed with cream cheese, added a strip of back strap, then wrapped with bacon. Dusted all of them with Traeger seasoning (brown sugar, garlic, paprika). smoked with pecan for about 30 minutes then turned the heat up to 375 for about 30 minutes. I'd give them a 7.5/10 but my Punkin Pie said 9/10. She has her masters in Dietary Nutrition and is a clinical dietitian, so I think her score carries more weight lol.

The leftovers were amazing right out of the fridge for breakfast.

WOW! Those do look GOOD!

Those look and sound delish.
I'd have to use the tamed Jalapenos though. My exit port cant handle the real ones. :nono:

If you scrape all of the seeds and white stuff out of the inside, it tames them down pretty good
