Sausage loaf/meat stick

Now that we all have a bunch of meat in our freezer's that we need to get ate up so we can do it again next year.  I thought I'd show you a recipe for a loaf that turn's out much like a summer type sausage that we really enjoy and you don't need a sausage press or anything fancy.

5-6 lb's lean burger meat.   We like deer and a bit of pork mixed in.  Beef work's well too.
1/4 cup curing salt.            We use Morton tender quick.
1/2 table spoon dry mustard
1 teaspoon garlic salt
3 tablespoon's liquid smoke
1 1/2 teaspoons black pepper
3 table spoon's mustard seed


Mix all the ingerient's together real well and then place them in a refrigerator [let's the spices move into the meat] for 48 hour's [We use a 1 gallon icecream pail with lid].  Shape into roll's 2-3 inches in diameter and as long as your cookie sheet.  Place on a rack on your cookie sheet or use a broiler pan [I hate washing these] so the grease drain's away from your roll while baking.  Bake for 4 hour's at 225F and remove. 
   I love these thing's and it seem's the guy's I travel with do too as it's alway's gone.  When done it should resemble this



The one just came out of the freezer and that's why there is white on it.  Try it, if you like it let me know if you don't please keep it to your self.

Thanks!  Actually double thanks for this post.  I didn't have the recipe for this (first thanks) but my mom used to make this before she passed and it brings back some great memories (the second thanks).  I need to get some made up for the holidays when the kids and grandkids are home and pass the memories along to a new generation.

You should really try it this stuff is awesome and if it aint what you want try L.E.M. Products in Ohio.
They have a variety of stuff for making such things pre mixed and smoking supplies as well......... :biggrin:
